Bread

It works if I cheat a little bit.  In my Grain Questions entry (April 17) I complained because the last 50# of wheat berries I bought just weren't working for me.  The bread dough never got any elasticity to it.  I would knead it and add gluten and it just wasn't working for me.  So today I caved and substituted white flour for 1/4 of the whole wheat flour.  It worked and was very elastic and it rose like it should. 




Finally, bread that can't be used for a boat anchor.  The caramel rolls turned out like they should, also.


Now, to get those goats trimmed.

Yes, unfortunately, there are times when we do have to "cheat" a little w/our bread! I used to use half and half wheat/white, but my family didn't like it if the bread didn't rise to their expectations. :-) So now, and especially since I have daughters who are 20 and 17, I have started using 1/4 c flaxseed meal. It still lets the bread rise (sometimes so high I have to take the top rack out of my oven!) and it gives the breat and nutty/whole wheat taste. Plus the flaxseed is VERY beneficial for women!!
